Using fork cut in pieces of cold butter & shortening, continue to cut fats into flour mixture until it is evenly spraed through flour
Slowy add in milk, mix gently with fork or using hands until everyhting is combined, do not over mix
Knead very gently once or twice, you should end up with a ball of dough.
On a clean surface dusted with flour roll out
Roll out dough to about 1 cm thick, fold dough over to form layers, gently roll dough again with very light pressure in order to keep layers visible
Using a cookie cutter cut your biscuits, (or cute them using a knife) and place biscuits on sheet tray lined with parchment paper and repeat the process 1-2 times until all of your dough is used
Be very gentle, you do not want to overwork your dough
Egg Wash
In a small bowl crack one egg and add in 1tsp water. Mix together
Genlty brush the tops of your biscuits with egg wash, use your fingertips or a pastry brush
Bake biscuits at 350F for 12-15 minutes until the tops are golden brown and the middle is soft
