Bites of Perfection

A few years back I was on the hunt for the perfect biscuit recipe and I came across this gem.  The Original recipe is from a Divas Can Cook.   I have made these biscuits a trillion times.  Each time I've modified, revised and tweaked the recipe to my liking until I achieved the exact balance that I was looking for.  What we have here is a moist and fluffy biscuit with buttery layers and a golden flakey top.

I am a lover of maple, thyme and butter!  Combine these amazing ingredients and you have a delightful sweet & savory spread that pairs well with these buttermilk biscuits.  Here is the recipe.

Equipment

  • Mixing bowl
  • Cookie Cutter
  • Clean surface to roll out dough
  • Rolling pin
  • Baking sheet with parchment paper
  • Oven
  • appetite

Ingredients
  

  • 1 cup Flour Cold
  • 1/2 tbsp Baking Powder
  • 1/4 tsp Salt
  • 1/4 tsp Baking Soda
  • 1/2 tbsp Sugar
  • 2 tbsp Shortening Cold
  • 1 1/2 tbsp Butter Cold
  • 1/2 cup Buttermilk Cold

Egg Wash

  • 1 each Egg
  • 1 tsp Water

Instructions
 

  • Mix all dry ingredients together
  • Using fork cut in pieces of cold butter & shortening, continue to cut fats into flour mixture until it is evenly spraed through flour
  • Slowy add in milk, mix gently with fork or using hands until everyhting is combined, do not over mix
  • Knead very gently once or twice, you should end up with a ball of dough.
  • On a clean surface dusted with flour roll out
  • Roll out dough to about 1 cm thick, fold dough over to form layers, gently roll dough again with very light pressure in order to keep layers visible
  • Using a cookie cutter cut your biscuits, place them on sheet tray lined with parchemnt paper and repeat the process 1-2 times until all of your dough is used
  • Be very gentle, you do not want to overwork your dough

Egg Wash

  • In a small bowl crack one egg and add in 1tsp water. Mix together
  • Genlty brush the tops of your biscuits with egg wash, use your fingertips or a pastry brush
  • Be careful not to add too much eggwash
  • Bake biscuits for 20-25 minutes until they are golden brown and soft
  • Let cool & enjoy!
