Wash & peel sweet potatoes. Cut potatoes into large cubes and add to a pot of water with 2 tbsp of salt and cook for 15-20 minutes or until fork-tender.
Once potatoes are cooked. Strain them and add them to a mixing bowl.
To your cooked potatoes add brown sugar, salt, vanilla extract, cinnamon, and butter.
Using a whisk or potato masher begin to mash potatoes and smooth.
Taste your sweet potato mash and adjust seasoning to your liking.

As always have fun with this. Nothing has to be exact. This can be a taste as you go recipe! You can even add a few sprinkles of nutmeg to bring out the seasonal spice flavors.It is okay if you leave some of the skin on the potatoes when you are peeling them. This will do you no harm and will actually add more nutrition to your dish!For a healthier alternative, switch out your butter with Smart Balance and the brown sugar with Agave sweetener or similar healthy alternatives of your preference.
