medium sweet potato
peeled and diced

cooked black beans
1/2
avocado
sliced
1/4

salsa

olive oil
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
Roast for 15 to 20 minutes, turning halfway through, cook until fork tender.
Warm tortillas in a skillet or microwave.
Fill each tortilla with roasted sweet potatoes, black beans, avocado slices, and salsa.
Roll up the burritos tightly, add oil to a skillet and sear burrito on all sides
Serve and enjoy!
