Clean your chicken and trim excess fat from thighs.
Add your chicken to a medium-size mixing bowl and season with garlic powder, black pepper, onion powder, salt, smoked paprika, and olive oil. Mix together making sure the chicken is well coated.
Allow your chicken to marinate at least 30 minutes. If you have the time, let your chicken marinate for about 4 hours or overnight. (If you are marinating your chicken overnight, do not add salt to your chicken. See notes)
When you are ready to cook your chicken, preheat your oven to 450 degrees F. Prepare a baking sheet with foil and set aside.
In a medium-size bowl add about 6 cups of all-purpose flour. To your flour add salt, pepper, and smoked paprika. Mix together.
Begin to add your chicken to the flour one or two pieces at a time. Completely coat each piece of chicken with flour. Make sure it is thoroughly coated, shake any excess flour off of your chicken.
Drizzle your baking sheet with olive oil and place your chicken onto your baking sheet. Once all of the chicken is on your baking sheet, drizzle the top of your chicken with about 2 tbsp of oil.
Bake your chicken at 450 degrees F for 30 minutes then flip your chicken and bake for another 25-30 minutes or until the internal temp reaches 165 degrees F.
