Instructions
Heat a large sauce pan over medium heat and add 2 tbsp of olive oil
Add onions, carrots, celery and garlic. Sauté for 3-5 minutes until onions are translucent
Add in meat mixture and allow to brown. This will take about 10 – 15 minutes. It is okay if some meat sticks to the bottom of the pot. Make sure you are using a plastic or wooden spoon, so you do not scratch your pot.
Once the meat is browned, deglaze the pan with wine and broth. Cook for about 2 minutes allowing the wine to reduce and cook out.
Add in tomato sauce and bay leave. Cover and allow to simmer on low heat for 30 minutes to 4 hours. Cooking time is prefference, the longer you allow your sauce to simmer the more flavorful it will be
Add salt and pepper to taste. You may want to add in some oregano and/or basil as well
Serve over zucchini noodles and enjoy with parmesan cheese

This Pasta bolognese recipe is also great when served over fresh pasta. I usually purchase my fresh pasta's from whole foods or a specialty market.
