Tofu Scramble

Ingredients
  

  • 1/2 block firm tofu crumbled
  • 1/4 cup bell pepper chopped
  • 1/4 cup onion chopped
  • 1/4 cup spinach chopped
  • 1/2 tsp turmeric
  • 1/2 tsp black salt for that eggy flavor
  • 1 tbsp olive oil
  • Optional: nutritional yeast for a cheesy flavor

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add the crumbled tofu and cook, stirring occasionally for about 5-7 minutes, until lightly browned.
  • Add the chopped bell pepper, onion, and spinach. Cook until the veggies are tender.
  • Stir in turmeric and black salt. Cook for another 2 minutes.
  • Optionally, sprinkle with nutritional yeast for a cheesy flavor.
