Tofu Scramble

Ingredients
- 1/2 block firm tofu crumbled
- 1/4 cup bell pepper chopped
- 1/4 cup onion chopped
- 1/4 cup spinach chopped
- 1/2 tsp turmeric
- 1/2 tsp black salt for that eggy flavor
- 1 tbsp olive oil
- Optional: nutritional yeast for a cheesy flavor
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the crumbled tofu and cook, stirring occasionally for about 5-7 minutes, until lightly browned.
- Add the chopped bell pepper, onion, and spinach. Cook until the veggies are tender.
- Stir in turmeric and black salt. Cook for another 2 minutes.
- Optionally, sprinkle with nutritional yeast for a cheesy flavor.
