Zucchini noodles have become more common these days. You can find zucchini noodles or any vegetable pasta for that matter, in most grocery stores already pre-cut. I've even spotted some in the frozen section. Here you have a classic bolognese sauce with zucchini noodles in place of pasta. Throw some parmesan cheese on top of and Bam! You hardly know the difference.
This is a very light and refreshing dish that is easy to make and GUILT FREE! Did I mention it's Gluten-free as well?
Not too long ago, I was put on to Rao's pasta sauce. For this recipe I used half Rao's and half Tuttorosso. Feel free to use any sauce mixture that you'd like. For a more traditional bolognese sauce, deglaze your pan with red wine in place of chicken stock. A pinot noir would do the job.
Rao's
I recently had some penne alla vodka. The vodka sauce was so good that I thought it was homemade. Turns out, it was Rao's penne alla vodka sauce. To be honest, I am always one to make my own sauces and not buy the pre-made store brought sauces because to me, the quality just isn't the same. Moving forward, I will surely explore more of Rao's sauces without a doubt.
Low Carb Pasta Bolognese - Keto
Equipment
- Sauce Pot
- Wooden spoon or Rubber Spatula

Ingredients
- 2 tbsp olive oil or any oil of your preference
- 1 each Large onion small diced
- 2 each carrots small diced
- 2 each celery stalks small diced
- 4 each Garlic cloves small diced
- 1 1/2 lbs Meatloaf Mix Any ground meat
- 1 cup Chicken Broth Any type of broth or stock
- 1/4 cup Red Wine Optional
- 1 jar Rao's Marinara Sauce 24 oz
- 1 can Tuttorosso Tomatoe Sauce 15 oz
- 1 each bay leave
- 12 each Zucchini - Cut into noodles Or use precut noodles
Instructions
- Heat a large sauce pan over medium heat and add 2 tbsp of olive oil
- Add onions, carrots, celery and garlic. Sauté for 3-5 minutes until onions are translucent
- Add in meat mixture and allow to brown. This will take about 10 – 15 minutes. It is okay if some meat sticks to the bottom of the pot. Make sure you are using a plastic or wooden spoon, so you do not scratch your pot.
- Once the meat is browned, deglaze the pan with wine and broth. Cook for about 2 minutes allowing the wine to reduce and cook out.
- Add in tomato sauce and bay leave. Cover and allow to simmer on low heat for 30 minutes to 4 hours. Cooking time is prefference, the longer you allow your sauce to simmer the more flavorful it will be
- Add salt and pepper to taste. You may want to add in some oregano and/or basil as well
- Serve over zucchini noodles and enjoy with parmesan cheese
