Equipment

  • Skillet
  • Grill or Oven or Skillet (for tomatoes)
  • Spatula

Ingredients
  

  • 1/2 cup baked beans
  • 2 tomatoes halved
  • 1 cup spinach
  • 1 sausage vegan or regular
  • 2 slices whole grain toast
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions
 

  • Preheat your grill or oven to medium heat. Grill the tomato halves until softened and lightly charred.
  • In a skillet, cook the sausage until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, sauté the spinach until wilted, about 2-3 minutes.
  • Toast the slices of bread.
  • In a small pot, warm the baked beans.
  • Assemble by placing the beans, grilled tomatoes, sausage, sautéed spinach, and toast on a plate.
