English Breakfast (Without Eggs)
Equipment
- Skillet
- Grill or Oven or Skillet (for tomatoes)
- Spatula
Ingredients
- 1/2 cup baked beans
- 2 tomatoes halved
- 1 cup spinach
- 1 sausage vegan or regular
- 2 slices whole grain toast
- Olive oil for sautéing
- Salt and pepper to taste
Instructions
- Preheat your grill or oven to medium heat. Grill the tomato halves until softened and lightly charred.
- In a skillet, cook the sausage until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, sauté the spinach until wilted, about 2-3 minutes.
- Toast the slices of bread.
- In a small pot, warm the baked beans.
- Assemble by placing the beans, grilled tomatoes, sausage, sautéed spinach, and toast on a plate.
