Loaded Double Baked Potato
Equipment
- Oven
- Sheet Tray
Ingredients
- 2 each Russet Potatoes
- 1 tbsp Olive Oil
- Salt & Pepper
- 4 Strips Bacon
- 1/2 cup Milk
- 1/4 cup Sour cream
- 1/4 stick Butter
- 1/4 cup Cheddar Cheese Shredded
- 2 each Scallions Chiffonade
Garnish
- 1/4 cup Sour cream
- 1/4 cup Cheddar Cheese Shredded
- 2 each Scallions Chiffonade
Instructions
- Heat oven to 400 degrees F
- Clean potatoes and them potatoes dry
- In a medium-size bowl, toss your potatoes with 1 tbsp of olive oil and 1 tsp of salt, rub your potatoes until they are fully coated
- Individually wrap your potatoes with aluminum foil and bake for 1 - 1/2 hours
- Test your potatoes readiness by stabbing them with a fork, once your potatoes are ready, remove them from the oven and set them aside to cool for about 20 minutes unwrapped
- Whilst your potatoes are cooling, prepare your bacon
- Set your bacon on a baking sheet lined with foil or parment paper, bake your bacon for 12-15 minutes or until ready. Remove from oven and set aside to cool
- Once your potatoes have cooled, slice them in half and begin to core out your potatoes unsing a spoon. Be gentle and try not to pierce, puncture, or rip the sides and skin of your potato skin
- Add the potato filling to a medium-sized bowl and begin to mash your potatoes using a whisk, a fork, a potato masher or even a ricer
- To your potatoes add in warm milk, sour cream, butter, 2 tsp of salt, and 1 tsp of pepper taste
- Taste your potatoes, once they are ready to add in cheddar cheese and sliced scallions
- Refill your potatoes with the mashed filling and top them with half of the cheddar cheese that you have measured out for garnish, about 2 tbsp
- Bake your potatoes for another 20-25 minutes at 400 degrees F
- Whilst you potatoes are baking, let's prep your bacon. Remove bacon from grease, pat with a paper towel to remover any excess grease and begin to rough chop
- Once your potatoes are ready, remove them from the oven and begin to load your poatoes with topping. Sour cream, cheddar cheese, bacon, and scallions.
