Sweet Potato & Black Bean Breakfast Burrito

Ingredients
  

  • 2 whole-wheat tortillas
  • 1 medium sweet potato peeled and diced
  • 1/2 cup cooked black beans
  • 1/2 avocado sliced
  • 1/4 cup salsa
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  • Roast for 15 to 20 minutes, turning halfway through, cook until fork tender.
  • Warm tortillas in a skillet or microwave.
  • Fill each tortilla with roasted sweet potatoes, black beans, avocado slices, and salsa.
  • Roll up the burritos tightly, add oil to a skillet and sear burrito on all sides
  • Serve and enjoy!
