Moist & Easy Banana Bread Recipe (Loaf or Muffins!)
Equipment
- Oven
- Mixing bowl
- measuring cups & spoons
- Whisk

- Loaf Pan or Muffin Tins
Ingredients
- 3 each ripe bananas, mashed we used 2 ripe bananas and 1 ripe sweet plantain
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2/3 cup yogurt or sour cream
- 3/4 cup white sugar or brown sugar for richer flavor
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
Instructions
- Preheat & Prep โ Preheat oven to 350ยฐF (175ยฐC). Grease a 9x5-inch loaf pan or line a muffin tin with paper liners.
- Mash & Mix โ Mash the bananas and plantain in a large bowl. Stir in melted butter, sugar, eggs, yogurt, and vanilla.
- Combine Dry Ingredients โ In a separate bowl, whisk together flour, baking soda, and salt.
- Fold & Pour โ Gently fold dry ingredients into the wet mixture. (Donโt overmixโthis keeps it soft!) Pour batter into loaf pan or muffin cups.
- Bake & Serve โ
- Loaf: cook in oven 40-60 minutes or until a toothpick comes out clean.
- Muffins: Bake 20-25 minutes until golden brown.
- Cool, slice & enjoy! ๐

Dairy-Free & Egg-Free Substitutes
- Butter Swap: Use coconut oil or a neutral plant-based butter.
- Yogurt Swap: Try plant-based yogurt or unsweetened applesauce.
