Ingredients
  

  • 3 each ripe bananas, mashed we used 2 ripe bananas and 1 ripe sweet plantain
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup yogurt or sour cream
  • 3/4 cup white sugar or brown sugar for richer flavor
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat & Prep โ€“ Preheat oven to 350ยฐF (175ยฐC). Grease a 9x5-inch loaf pan or line a muffin tin with paper liners.
  • Mash & Mix โ€“ Mash the bananas and plantain in a large bowl. Stir in melted butter, sugar, eggs, yogurt, and vanilla.
  • Combine Dry Ingredients โ€“ In a separate bowl, whisk together flour, baking soda, and salt.
  • Fold & Pour โ€“ Gently fold dry ingredients into the wet mixture. (Donโ€™t overmixโ€”this keeps it soft!) Pour batter into loaf pan or muffin cups.
  • Bake & Enjoy โ€“
  • Loaf: Bake 40-60 minutes or until a toothpick comes out clean.
  • Muffins: Bake 20-25 minutes until golden brown.

  • Butter Swap: Use coconut oil or a neutral plant-based butter.
  • Yogurt Swap: Try plant-based yogurt or unsweetened applesauce.
