Lately, if I’m eating pancakes, they have to be a protein pancake mix—it tastes just like the regular kind. Plus, if I want to sneak in extra nutrients for the kids then I puree fresh spinach and mix it into the batter. It's an easy hack that boosts vitamins without changing the taste! My daughter and I make them together all the time.
Honestly, it’s a full-circle moment. I grew up making pancakes with my mom. Now, I get to do the same with my daughter. I never imagined how special that would feel.
