- 1 each onion, diced
- 2 stalks celery
- 1 each carrot
- 5 lbs ham
- 20 each cloves
- 1/4 cup orange juice
- 3/4 cup water
- 3 tbsp dijon mustard
Glaze
- 1/2 cup orange juice
- 6 tbsp honey
- 1 tsp cinnamon
- 2 each bay leave
- 2 tsp salt
- 1/2 tsp allspice
- 4 tbsp mustard
- 1/2 cup brown sugar
- 1 stick butter
- 1 cup liquid from ham
Instructions
Ham
- Remove ham from the fridge, set out at room temp for 1-2 two hours before cooking.
- Dice onions, celery & carrot. Spread mirepoix on the bottom of a baking dish and place ham on top.
- Using a sharp knife, score ham diagonally. Repeatย scoring, diagonally, in the opposite direction. This will create diamond patterns.
- Once the ham is scored, stick cloves into the intersections of each diamond. Watch the recipe video below for a tutorial.
- Mix together 1/4 cup orange juice, 3/4 cup water, and 3 tbsp of dijon mustard. Pour this mixture over the ham.
- Cover ham with foil and bake in the oven at 325 degrees F for 1hr and 20 minutes.
Glaze
- In a saucepan add orange juice, honey, cinnamon, bay leaves, salt, allspice, dijon mustard, brown sugar, and butter. Whisk everything together.
- Drain 1 cup of liquid from your ham and add it to the pot with your glaze mixture.
- Cook your glaze on medium heat for 10-15 minutes or until it is reduced by half. The glaze should be thick enough to fully coat the back of a spoon. Watch the recipe video below for a tutorial.
- After the ham has cooked for 1hr and 20 minutes covered, remove it from the oven
- Turn oven to 425 degrees F. Glaze your ham and then put it back in the oven
- Repeat this process every 10 minutes or until your ham reaches an internal temperature of 135 degrees F.
- Cover your ham and let rest for 15-20 minutes. Carryover cooking will bring the internal temp to 140 degrees F. See notes.
- Slice ham & enjoy with glaze!
