Elotes – Mexican Style Street Corn

Mexican Street Food
Elotes are Mexican-style street corn that is grilled or steamed, coated in butter, chipotle aioli, cotija cheese, and cilantro.
With the weekend here and the 4th of July only two days away, I figured this would be the perfect recipe to post!
I was introduced to Elotes when I started working as a Chef at Dos Caminos. Prior to my stint at Dos Caminos, I had no idea what an Elote was nor had I ever heard of it. Mexican has always been one of my favorite cuisines to eat but I barely knew how to make a traditional Mexican dish. Fast forward 5 years, I rave about this corn and Mexican is one of my favorite cuisines to make.
Pro Tip:
- If you have access to a grill use it! This recipe tastes SO much better when the corn is grilled.
Time saver:
- Rather than making your own chipotle aioli, an alternate option would be to purchase it.
Modification:
- This dish is not very spicey. Especially when you are making your own chipotle aioli and control the number of chipotles that you use. If you are not a fan of spice, replace the chipotle aioli with sour cream.

Elotes - Mexican Style Street Corn
Equipment
- Large pot
- cutting board
- Knife
- Small bowl x 2
- Food processor or Blender
- Strainer
- Mixing bowl - large
Ingredients
Chipotle Aioli
- 1 tbsp Chipotle peppers canned chipotle in adobo, blended or chopped
- 1/4 cup Mayo
- 1 pinch Salt & pepper to taste
- 1 tsp Lime juice fresh-squeezed
Elotes
- 1 bunch Cilantro save soome foor garnish
- 5 each Corn on the cobb
- 3 tbsp Butter
- 8 oz Cotija Cheese
- Smoked Paprika or Chilli powder for garnish
- Lime wedge for garnish
Instructions
Chipotle Aioli
- Add your chipotle peppers into a small blender or bullet and blend until roughly chopped. You can also do this by hand using a cutting board and knife. Set aside.
- Add 1 tbsp of chipotle, mayo, salt pepper, and lime to juice to a bowl. Mix together. Taste as adjust seasoning accordingly. If you would like more spice, add more chipotle.
Corn Assembly
- Add peeled and cleaned corn to a pot of hot water and steam for 5-10 minutes or until cooked. This will not take long at all.
- Wash, dry, and rough chop cilantro. Set aside.
- Mix a hand full of cilantro with cotija cheese and set aside. Save soome cilantro for garnish.
- Once the corn is ready, strain and set aside to begin assembly.
- Rub each piece of corn with a generous amount of butter. Then too follow, rub each piece of corn with chipotle aioli.
- Then coat each piece of corn with the cotija cheese and cilantro mixture.
- Lastly, plate corn and garnish with smoked paprika or chilli powder, cilantro and lime wedges.
- Enjoy!
