Mexican Street Food

Elotes are Mexican-style street corn that is grilled or steamed, coated in butter, chipotle aioli, cotija cheese, and cilantro.

With the weekend here and the 4th of July only two days away, I figured this would be the perfect recipe to post!

I was introduced to Elotes when I started working as a Chef at Dos Caminos.  Prior to my stint at Dos Caminos, I had no idea what an Elote was nor had I ever heard of it.  Mexican has always been one of my favorite cuisines to eat but I barely knew how to make a traditional Mexican dish.  Fast forward 5 years, I rave about this corn and Mexican is one of my favorite cuisines to make.

Pro Tip:

  • If you have access to a grill use it!  This recipe tastes SO much better when the corn is grilled.

Time saver:

  • Rather than making your own chipotle aioli, an alternate option would be to purchase it.

Modification:

  • This dish is not very spicey.  Especially when you are making your own chipotle aioli and control the number of chipotles that you use.  If you are not a fan of spice, replace the chipotle aioli with sour cream.
