Caribbean style rice & peas

Rice and Peas Caribbean Style

Classic Caribbean style rice and peas that everyone loves!

Equipment

  • Medium size pot with lid
  • Fork
  • rubber spatula
  • Medium - Large, Mixing bowl

Ingredients
  

  • 1 cup Jasmine Rice Long Grain Rice
  • 1 bunch Thyme
  • 2 tbsp Butter
  • 2 tbsp Olive oil
  • 2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Coconut Milk
  • 3/4 cup Water or a little less than a cup of water
  • 1 can Beans, rinsed Red kidney, Pinto or Pink beans

Instructions
 

  • To a medium-size pot add in rice, thyme, butter, oil, salt, and pepper
  • Also, add to your pot 1 cup of water, 1 cup of coconut milk and 1 can of rinsed beans
  • Mixed everything together
  • Set your pot on the stove uncovered and turn your flame to medium heat
  • Once your rice mixture beings to boil, turn the flame to low and cover your pot with a lid. Allow your rice to steam for about 18-23 minutes or until rice is tender
  • Taste rice, if ready, add to a large bowl and fluff using a fork or a spatula
  • Once you have fluffed (mixed) your rice, taste it, add salt, pepper, and butter to taste
  • Enjoy!

Notes

Be sure that your rice is steaming covered on low heat. After about 18 minutes of cooking, taste your rice to see if it is ready.
When your rice is ready, remove the lid and fluff your rice in a bowl using a fork or rubber spatula. The reason you want to fluff your rice gently is so that it does not get mushy depending on how soft your rice is. If you are cooking your rice in a large pot, you can fluff your rice in the pot.
I like my rice to be al dente, I do not like my rice to be overly mushy so I add a little less than 2 cups of liquid to my 1 cup of rice.
